About the speaker:
Mr Volker Hofer – President and Owner Barbarossa Cantina
Barbarossa Cantina – wine from friends for friends since 2013 imports quality wines from Germany, Austria, and Italy to China focusing on excellent price-quality performance outside of the big brands and guaranteeing the quality through all supply chain from the winery to the customer. Mr Joey Cheong – Owner + Chef Joey, from Singapore, is an “old China hand” with a track record starting from 1995. He “retired” from a successful advertising career in 2015 to pursue his calling in F&B. As a self-taught home cook, he’s not bounded by cooking rules. This allows him to create concepts and food with interesting twists; yet having home cooking flavors. About the location: UMAAMI, since 2018 is a global kitchen and bar with strong Singaporean DNA. It serves a variety of honest to good cooking; often executed with an interesting twist while maintaining authenticity. UMAAMI is also a perfect drinks location as it offers great wines, fresh draft, and bottled craft beers, perfectly executed cocktails, and spirits. Posted at 03:31h, 20 SeptemberIt was a very pleasant evening and I enjoyed very much the collaboration with Karl-Heinz Hessenthaler and especially with the Chef, Joey. A big challenge to combine nice European wines with the flavoured and spiced dishes of South Asian kitchen. I am happy and proud that for the most dishes we succeeded. Especially the Mesel Grauburgunder Barrique trocken to the spiced Currychicken (thanks to the strong vanilla and the upper limit of permitted sugar) and the Cabernet Cubin (a German Cabernet clone with less tannins and acidity) to the short ribs in Imperial stout machted perfectly and were appreciated by the “eaters”. Particularly happy I am because those wines have been created by my friend Klaus, the owner of the winery Mesel brothers from Bad Dürkheim in Germany, Pfalz, where I am living. In this way our concept “wines from friends for friends” had been confirmed in the best possible way. Thanks to the organisation for the opportunity and Joey for his creativity. Thanks to the Organizer MITTELSTAND INTERNATIONAL for came up with this brilliant event. And thanks to the Hosts UMAAMI global kitchen and Barbarossa Cantina who brought us this concept “wines from friends for friends” , that’s cool!
